I believe they act like that simply because they do not understand how we artists do things. It is a common occurrence for photographers to attempt to correct poor composition on the fly, and people tend to take that personal. My advice is to do what you can, but accept the things that you can't change. You could attempt to inform them of their poor choice of posing, but it is just as likely that it will result in you getting into a fight with a clueless person. So in summary, they do it because they don't know any better.
You should have offered to take the photo with your own camera and then ask her for contact details so you can send it to her. This only works if you are not spilling spaghetti everywhere though

Kek, I never go shooting anywhere near people but once while visiting family I went to a national park for a walk. I heard people coming so went off the trail and sat down because autism and I was high. A young couple passed and I heard the dude say "nothing like a walk after sex" and then the girl said "i need to poop".
That memory is going to live with you forever. And maybe now for me too.
